In Mexico City, fresh-squeezed street-vended orange juice is contaminated with fecal coliforms, Escherichia coli, and Shiga toxin-producing E. coli: A potential risk for acquiring foodborne diseases

This study evaluated the microbiological quality and prevalence of Escherichia coli diarrheagenic E. pathotypes (DEP) among fresh-squeezed orange juice from street vendors their hygienic practices. Sixty stalls in Mexico City were visited, 60 samples purchased. Most (65%) had poor Twelve (20%) prepared at time purchase, while other sold already-squeezed juice. All analyzed positive for aerobic mesophilic bacteria, with limits ranging 1 to 6.8 log CFU/mL. A total 35 (58.3%), 27 (45%), 5 (8.3%) coliforms, fecal coli, respectively, present concentrations < 3 > 1100, 53 MPN/mL, respectively. Two harbored DEP 3.6 9.2 MPN/mL. Both Shiga toxin-producing strains, toxin 2 (stx2) locus. Our results suggest that consumption street-vended may pose a health risk consumers, revealing necessity implement adequate hygiene safety practices protect consumers.
